Since moving in with Sue and Cor, I have been trying my hand at baked goods again. A few weeks ago we made s'mores brownies that came out great using the Betty Crocker gluten free brownie mix. They were almost as good as the Krusteaz gluten free brownie mix that even my gluten-eating mom has converted to.
And so I got inspired. I miss cake a lot, and with my birthday coming up in less than 2 weeks I have been craving cake like a monster. My mother makes this awesome lemon cake with a recipe handed down to her from her grandpa. Its one of those ones I've been helping her make since the dawn of time, so I modified the recipe to make an awesome gluten free poke version. Like most black people, I never learned to measure when I cook, so please understand these are guesstimates that I adjust as I taste. Enjoy!

The steadier you squeeze your piping bag, the more consistent your ropes of frosting will be when they fall onto the cake. Mine were not consistent, so I swapped down to a smaller tube piping tip and crazily laid one strand over the other to disguise the mess ups. It made a really interesting birds' nest like pattern on top.
As always, this recipe is easily modified to use with any yellow cake mix, but being a celiac I stand by Betty Crocker!
